4-Ingredient Coconut Lemon Balls
These coconut lemon balls, are ready in no time, which is their huge advantage. But have in mind that they will disappear just as quickly because they are delicious, juicy and filled with different aromas that you will adore in this combination.
4-Ingredient Coconut Lemon Balls
Ingredients:
- 1/2 lemon
- 3 tablespoons nut butter of your choice (we used a 1: 1 mixture of cashew and tahini butter)
- 1 tablespoon coconut oil
- 2-3 tablespoons of maple syrup (or other sweetener of your choice)
- 50 g desiccated coconut flakes (1/2 cup) + 20 g for rolling balls
- Lemon zest – optional
Procedure:
- Squeeze the juice from half a lemon which should give you about 2-3 tablespoons, but if you want you can add more.
- Mix lemon juice with nut butter, coconut oil and maple syrup. Add grated lemon zest if desired.
- Add the coconut flakes and mix until you get a dough-like mixture that you can shape into balls.
- Roll the balls in coconut flakes and place in the refrigerator for a few hours or overnight.
