Healthy & Crunchy Mini Spinach and Cheese Pizzas
The idea for these mini spinach and cheese pizza was born when suddenly guests came over and I didn’t have anything prepared.

I needed a quick recipe with ingredients that I already had in my kitchen at that time.

The result…? These insanely delicious healthy mini pizzas that blew everyone’s mind. We enjoyed them with some cold bear on the patio…simply amazing!

This recipe is great for breakfast or quick lunch too! Or simply as a healthy snack on the go. You can get creative with the recipe and add toppings of your choice. Today I am showing you my favorite way to prepare them: with spinach and cheese!

Healthy & Crunchy Mini Spinach and Cheese Pizzas
Ingredients
PIZZA CRUST:
- 1 cup whole wheat flour
- 1/2 cup Greek yogurt
- 3 tbsp olive oil
- 1 tbsp flax seeds
TOPPINGS:
- 3 cups baby spinach (boiled)
- 2 tbsp vegan butter (or low-fat butter)
- 1 cup grated mozzarella cheese (or cheddar, or Parmesan cheese)
Instructions
- In a deep bowl, mix the flour and flaxseed, then add the oil and yogurt and mix well. You should get a mixture that will not stick. If it is very dry you can add a little yogurt or if it is very wet you can add a little more flour.
- When you make a nice ball as in the picture, make a thin crust out of it and make circles with the help of a cup or a small plate. You can leave it big, if that makes it easier for you.
- Coat each circle with butter, then arrange the spinach on each pizza and finally add a little grated cheese.
- Bake in a preheated oven at 350 degrees F for about 10-12 minutes. They are ready quickly, if your oven is strong, make sure they do not burn.These mini pizzas are perfectly combined with fresh tomatoes on top! Enjoy!
