Quinoa Protein Pancakes (Egg-Free & Flour-Free)
These are the most fluffy pancakes in the world, and they are without eggs, without flour and with only 4 ingredients (I also count the water ๐).
They are neutral and you can eat them in both salty and mild versions.

I spread tahini on them, honey and my favorite sugar-free plum jam. I have not done anything easier. My husband and kids ate these pancakes in literally a minute!
Feel free to give them to your babies who are above 8 months old, they will love them too!
They are gluten free so here is a great suggestion for a tasty meal for those who have a gluten allergy or intolerance.
Quinoa Protein Pancakes

Ingredients
- 1 cup quinoa
- 1 cup water
- 1 tbsp olive oil
- 1 tsp baking powder
Instructions
- Soak the quinoa in water overnight, which means at least 7-8 hours. The next morning throw away the water and add 1 cup of new water. Measure with the same cup you used to measure the quinoa, it is important to maintain that ratio. Add 1 tablespoon olive oil and 1 teaspoon baking powder. Put in a blender and mix until you get a uniform thick mixture. You should get a very good smooth density as for pancakes.
- Fry in a non-stick pan without oil. From this amount I got 15 American-sized pancakes ๐They are so fluffy that I just could not believe how they were made from just one ingredient.
