Amazingly Tasty & Healthy Blueberry Oatmeal Breakfast Cake

If you follow me for a while, you know I like to prepare some tasty whole breakfast. So far, this is my favorite recipe because this blueberry oatmeal cake is heavenly! Honestly, I did not expect it to come out so delicious. I knew it would be OK, but not so much. So really, I was very pleasantly surprised even by myself 🙂. What I liked the most was that instead of making breakfast every morning, it was already pre-made and I just added a few pieces in a glass bowl and my breakfast for work was ready in 2 minutes.

This time I decided on blueberries because firstly I like blueberries, and secondly I had a lot left in the fridge so I told myself to use them until they spoil. Of course, you can replace them with other fruits if you wish or even a mix of different fruits.

As for the oats in the recipe, I used whole grain oats as opposed to the oats I use in classic oatmeal (small). Of course, it can be replaced with that, but I would recommend you to use this one so that it does not break and crack during baking.

I have nothing else to add, PLEASE try this. I really can not recommend it enough. Not only is it a great idea for breakfast, but also as a dessert. I use less sweetener in the recipe because I used it for breakfast, but feel free to add 2-3 tablespoons plus for the dessert variant.

Amazingly Tasty & Healthy Blueberry Oatmeal Breakfast Cake

Ingredients

  • 3 cups whole grain oats
  • 1/3 cup maple syrup
  • 1/2 cup melted coconut oil
  • 1/2 cup almond milk
  • 2 eggs
  • 2 tbsp vanilla extract
  • 2 tbsp cinnamon
  • 2 tbsp baking powder
  • 1/2 tsp salt
  • 1 cup fresh blueberries

Instructions

  • Preheat the oven to 350 F, or 175 C, and place the baking paper on a baking tray. I used a 8 × 8 container, but any container will be OK only there will be a difference in the size and thickness of the bars.
    In a large, deep bowl, add the oatmeal, cinnamon, baking powder and salt. Stir and add the maple syrup. Stir well again until the maple syrup is mixed with the other ingredients.
    In a separate bowl, add all the other ingredients (except the blueberries) and stir until a smooth, liquid mixture is obtained.
    Add this mixture to the oatmeal mixture and stir until it is completely combined. Add the blueberries and gently stir in the mixture (leave a few to finally add to the surface of the mixture)
    Add the mixture to the prepared baking pan and add the preserved blueberries to the surface.
    Bake for 35 minutes, or until the surface of the cake gets a golden color.
    Allow to cool before cutting into bars. Do not worry if the cake breaks or you do not get perfect bars.
    Serve with Greek yogurt and extra fresh fruit or just as it is.
