Easy to Make BLT Zucchini Salad
A bowl of this BLT zucchini salad is the perfect addition to any meal. It’s low in carbs and super healthy and delicious. It can be a great dinner for those wanting to lose weight, or are on a low carb diet plan.

Zucchini is one of the most versatile vegetables on the planet. It’s high in antioxidants and nutrients and aids to a better digestion. You can prepare it shredded, sliced, or whole. The choice is completely up to you. In this recipe, I will show you how to prepare it noodle-sized, almost like spaghetti looking.
You will need a spiralizer to create the noodles, and then cut them into smaller pieces. A medium sized grater will work just as well.
Easy BLT Zucchini Salad
Ingredients
- 2 medium zucchinis (4 cups zoodles)
- 2 tbsp olive oil
- 1 tbsp red wine vinegar
- 1 cup halved cherry tomatoes
- 1 cup crumbled feta cheese
- 1 cup crumbled crispy bacon
- salt and pepper to taste
Instructions
- With a spiralizer make the zoodles. Cut into smaller pieces.
- Whisk together the oil and the vinegar and add them to the zucchini noodles.
- Add tomatoes and cheese. Sprinkle salt and pepper to taste.
- Refrigerate the salad for 1 hour before serving so that the flavors incorporate with the zucchini.
- Before serving, add the bacon on top.
