Vegan Sweet Potato Cauliflower Soup to Warm Your Soul
This creamy sweet potato cauliflower soup is definitely my ultimate favorite soup for this year! The combination of flavors and the coconut milk makes it so creamy you’ll forget it’s totally vegan and you don’t even need any added cream!

The first time I made this recipe, the soup was gone within seconds and everyone in my family was totally surprised and loved the flavor!
Since then, I am making it at least every week. You can make it throughout the whole year and use frozen cauliflower. However, make sure to defrost it first, before adding it to the soup.
Trust me, this soup is a MUST TRY at your home. Top it with some extra coconut milk, mix and enjoy it warm!
Vegan Sweet Potato Cauliflower Soup
Ingredients
- 1 lb sweet potatoes (peeled, chopped)
- 1 head cauliflower (chopped)
- 1 onion (diced)
- 1 carrot (diced)
- 5 cups vegetable broth
- 1 tsp paprika
- 1/2 tsp oregano
- 1/2 tsp Himalayan salt
- 4 cloves garlic (peeled, chopped)
- 1 1/2 cups coconut milk
- 1/4 cup all-purpose flour
Instructions
- In a large saucepan, add all ingredients except for the milk and the flour.
- Cover with a lid and bring to a boil. Cook for 20-25 minutes until the veggies are cooked and soft.
- In a bowl, mix the milk and flour until well combined.
- Add this mix to the saucepan and cook until the soup has thickened (around 2-3 minutes)
- Remove from heat, and blend it with an immersion blender, or divide into batches and blend it in a blender until smooth.
- Serve in bowls add additional coconut milk on top and eat immediately! Enjoy
