Delicious Grilled Mexican-Style Corn
Servings 4
Ingredients
- 4 ears of corn, husked
- 1 tsp salt
- 2 tbsp low-fat mayonnaise
- juice of 1 lime
- 1/2 tbsp chilli powder
- grated Parmesan cheese
Instructions
- Heat the grill until hot. While heating the grill, bring a pot of water to a boil. Add the corn and the salt and boil for around 5-6 minutes until the corn is slightly cooked.
- Drain the corn, pad with a towel to make sure it is not wet. Transfer it to the grill.
- Mix the mayonnaise and the lime juice. Remove the corn from the grill and paint it with the mayonnaise mix, then dust with chilli powder and Parmesan.
- Serve and enjoy!
