Cherry Baked Oatmeal for Breakfast (Vegan, Low-Fat, Gut-Friendly)

Today, I was craving a nice warm bowl of oatmeal, so I decided to do a little baking and make a nice hot creamy cherry baked oatmeal. Honestly, I liked it so much that I ended up making it twice so that my husband and kids can try it! Everyone was obsessed with the combination of flavors.

The refreshing flavor of the cherries and the crunchy rolled oats made this breakfast special. Not to mention it’s super easy to make and it is vegan, kid-friendly, low-fat and gut-friendly.

As I mentioned in my previous posts, I am focused on clean eating and losing weight in a healthy way, so these healthy low-fat recipes will keep coming.

How to make this cherry baked oatmeal?

For this cherry baked oatmeal you’ll need some frozen or fresh cherries, good old fashioned rolled oats, cinnamon,  chia seeds, flax seeds, honey or maple syrup for sweetness, cocoa powder, and almond milk.

You should take a non-stick baking pan, add all your dry ingredients, mix it up, then add the wet ingredients, give it a stir and bake on 375 F for 7-10 minutes or until the liquid is absorbed and the oats look crunchy.

Once you bake them, go ahead and use your creativity for the toppings. As I like to mix sweet and sour flavors I went for sliced bananas, some peanut butter, and an extra splash of milk and honey.

Cherry Baked Oatmeal for Breakfast

Ingredients

  • 1 cup old fashioned rolled oats
  • 1/2 cup frozen or fresh cherries
  • 1 tbsp chia seeds
  • 1 tbsp flax seeds
  • 1/2 tsp cinnamon
  • 1 tbsp cacao powder
  • 2 tbsp honey or maple syrup (or less according to taste)
  • 1 1/2 cup unsweetened almond milk
  • half a banana, sliced (optional)
  • 1 tsp peanut butter (optional)
  • splash of almond milk (optional)

Instructions

  • Preheat the oven to 375 F.
  • In a non-stick baking pan, add the oats, cinnamon, cacao, chia and flax seeds, Stir to combine.
  • To this, add the milk, honey, and cherries. Stir nicely to combine. (The oats should be covered with the milk completely, if not covered add more milk)
  • Place in the oven and bake for 7-10 minutes or until the oats have absorbed the liquid and they are golden-brown looking.
  • Serve with some sliced banana, peanut butter and some extra milk for creaminess. (optional)
  • Enjoy!
