If you are looking for a super fast breakfast option, yet healthy and without ANY refined sugar, you should check these banana oatmeal muffins.

This morning I was really in a rush and had to meal prep for the whole week, shoot some videos, finish work and make breakfast for everyone. So, instead of using lots of bowls and dishes, I thought, why not make everything in a blender and see how it turns out?

Well, let me tell you, these blender banana oatmeal muffins turned much better than I thought! Super moist, sweet and healthy, and my whole kitchen smelled amazing and inviting.

The recipe is super simple, just pop everything into your blender, blend on high until combined and creamy, pour into muffin cups and bake! After about 10 minutes, you’ve got yourself some really nice breakfast muffins! My kids loved it with milk, and me and my husband enjoyed them with a cup of coffee!

Blender Banana Oatmeal Muffins

Ingredients

  • 2 cups rolled oats
  • 1 cup plain Greek yogurt
  • 2 medium ripe bananas
  • 2 tbsp honey
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • pinch of sea salt
  • 1/2 tsp vanilla extract
  • 1 cup dark chocolate chips (optional)
  • 1/2 cup raisins (optional)

Instructions

  • Preheat oven to 350 degrees F. Line your muffin tray with 12 muffin cups.
  • In a blender, first add your oats and blend until you get a nice flour-like mixture.
  • Then add all other ingredients (EXCEPT for the chocolate chips and raisins) and blend on high for 3-4 minutes, or until everything is combined and smooth. In the end add the add-ins of choice and stir with a spoon)
  • Pour this mixture in your 12 cups evenly. Bake for 10-13 minutes or until a skewer inserted in the middle comes out clean.
  • Leave them to cool for 5-10 minutes and they are ready to serve! Enjoy!
