The idea of overnight chia pudding is to save some time in the morning and still get a filling nutritious and healthy breakfast. It’s a great meal prep idea you can grab and eat on the go. But be careful, this apple pie chia pudding is so delicious, you might find yourself craving it for dessert as well!

Full of fiber, protein, omega-3 and antioxidants, this apple pie breakfast will for sure become your morning routine.

What’s so great about chia pudding?

Chia pudding is amazing because it is both very healthy and tastes delicious. Chia seeds are super-foods as they are loaded with nutrients and offer lots of health benefits. However, the awesome thing about chia seeds is that when you mix them with milk, or any liquid they soak up and expand into an ultra healthy jello! Add in some flavors, and you’ve got yourself the healthiest pudding there is!

Apple Pie Overnight Chia Pudding

Prep Time 10 minutes
Servings 4 people

Ingredients

  • 1 cup unsweetened coconut milk
  • 1/4 cup chia seeds
  • 1 tbsp brown sugar
  • 1 tbsp maple syrup
  • 1/2 tsp cinnamon
  • 3/4 cup grated apple
  • 1/2 cup crumbled graham crackers
  • some additional graham crackers, chopped

Instructions

  • In a medium bowl, mix coconut milk, chia seeds, brown sugar, maple syrup, and cinnamon until they combine.
  • Set aside for 10 minutes, and stir again to break up any clumps of chia seeds. Add in the apple.
  • Cover with a plastic wrap and let it in the refrigerator for 2 hours, or overnight.
  • When ready to serve, portion out 4 equal servings.
  • Sprinkle some graham crackers on top, cinnamon sprinkles, or apples.

Note: If you don’t have coconut milk, you can use any other milk of your choice, they all work just as fine.
