The Most Delicious Vegan Lentil Fritters

I am not a vegan, I like to eat a good piece of meat, but sometimes the body needs a break from animal products and detoxification.

I usually prefer to challenge myself and cleanse my body more often, and not eat meat for several days. I like to challenge you to try as well! During this period, eat foods of exclusively plant-based origin and fresh salads.

Maybe this is exactly the period for cleansing after the long quarantine days where we used to be home and cook heavy meals most of the time.

I present you an interesting, light and tasty recipe of my favorite healthy vegan lentil fritters. Combine them with fresh green salad and a little boiled broccoli, make burgers, or even eat them for breakfast!

The Most Delicious Vegan Lentil Fritters

Ingredients

  • 2 cup boiled lentils
  • 1 onion
  • 1 carrot
  • 2 garlic cloves
  • 1/2 zucchini
  • 1-2 tbsp bread crumbs (or almond meal for a healthier option)
  • salt, pepper, dried mint, oregano, chili powder (to taste)
  • 1 tbsp olive oil

Instructions

  • Boil the lentils, let it cool for 10 minutes and add it to a deeper bowl and mash well with a fork or spoon. Grate the carrot, onion and zucchini and add them to the lentils. Finely chop the garlic and add it to the mixture together with the salt and spices. Mix well and if the mixture is liquid add bread crumbs or almond meal to thicken.
  • Form fritters and arrange them in a pan lined with parchment paper, sprinkle the fritters with a little olive oil and bake them in a preheated oven at 400 degrees F for about 20 minutes. The burgers should be golden brown and crunchy the top and be soft inside.
