Alkalizing Green Soup
Ingredients
- bunch fresh asparagus chopped
- 1 small onion diced
- 1 bunch fresh kale chopped
- 1 cup fresh spinach
- 1 fennel bulb diced
- 2 celery stalks chopped
- 1 1/2 cup low-sodium vegetable stock
- 2 garlic cloves minced
- 1 tsp coconut oil
- juice of one lime
- toasted nuts and seeds (optional, to garnish)
Instructions
- In a medium pot, heat the coconut oil, then add onion, garlic, asparagus, fennel and celery stalks and cook on medium heat for about 5 minutes.
- Add in the vegetable stock and simmer for another 5-10 minutes.
- Add spinach and kale leaves and remove from heat.
- Transfer to a blender, add lime juice and process until you get a nice creamy texture.
- Serve warm, topped with toasted nuts.
