Apple Cinnamon Banana Bread – Your Next Favorite Fall Treat

Seems like my blog slowly turns into granola, banana bread and pancakes recipe-based, but I can’t help myself when my favorite things are to cook them, eat them and experiment with new flavors and recipes.

This time I bring you a new recipe for banana bread with the same amazing taste, but with a little twist and in a nutshell with fall vibes 😊 WOW. You see these poetic words coming out of my mouth (haha).

I hope you like this banana bread just as much as the previous ones.

Apple Cinnamon Banana Bread

Ingredients:

  • 2 medium bananas (mashed to be in the amount of 1 cup)
  • 2 eggs
  • (1/3 cup) coconut oil, melted
  • (1/3 cup) maple syrup (or other liquid sweetener)
  • (1/4 cup) almond milk (or any milk )
  • (2 + 1/4 cup) oat flour (oats processed in a blender)
  • 1 teaspoon cinnamon
  • 2 teaspoons baking powder

For cinnamon filling: (optional but highly recommended)

  • (1/4 cup) apple puree
  • (1/4 cup) coconut sugar (or brown sugar)
  • 1 teaspoon cinnamon

Method of preparation:

  1. Preheat the oven to 350º F and place the baking paper on a baking tray.
  2. In a large deep bowl, add the mashed bananas, eggs, coconut oil, maple syrup and milk. Stir well to even out and combine the ingredients.
  3. In a small, deep bowl add all the other ingredients (oat flour, baking powder, cinnamon) and stir. Add this mixture to the liquid mixture in a large bowl and mix until well combined and all the ingredients are combined with as few lumps as possible. The mixture should be thick.
  4. In a small, deep bowl, add all the cinnamon filling ingredients. Stir to combine. Remove the container to the side.
  5. Add half of the prepared banana bread mixture to the baking pan. It does not have to be exactly half, it is not so important. Level with a spoon or spatula.
  6. Using a spoon, add the cinnamon filling to the banana bread in certain places, and then spread it with a knife and make swirls or circular movements. It does not have to be perfect, what we are looking for is that “marble effect”.
  7. Add the rest of the banana bread to the cinnamon filling, then add the rest of the cinnamon filling in the same way.
  8. Bake for 50 minutes, or until it turns golden brown and when it is not pricked with a knife or toothpick and comes out clean without any residue from the mixture.
  9. Allow to cool slightly before cutting.
