Autumn Apple Cinnamon Pancakes
Now that autumn has officially arrived, all I can think about is APPLES. This autumn, I am planning to try and experiment with apples as much as I can. I mean, who can resist a warm bowl of apple cinnamon oatmeal, some apple banana muffins, or some classic apple pie?

Stuffed Apples with Honey, Rum and Nuts
Autumn Apple Cinnamon Pancakes
Ingredients
- 90 gr. quick oats
- 60 gr. almond milk
- 120 gr. apple puree *
- 2 teaspoon baking powder
- 1 teaspoon apple cider vinegar *
- 1 teaspoon honey
- 1/4 teaspoon nutmeg
- 1/2 teaspoon cinnamon
- 1/4 teaspoon cardamom
- a pinch of ground cinnamon
*If you use commercial apple puree, make sure that it is with 100% apples without added ingredients.
*Apple cider vinegar is added to get a reaction with the baking powder that will help the pancakes to grow when fried and to get that fluffy effect.
Method of preparation
- All ingredients are added to a blender and blended for a few minutes until a combined, creamy mixture is obtained.
- Allow this mixture to sit at room temperature for 5-10 minutes to thicken.
- Heat a non-stick frying pan over medium-high heat and add a little coconut oil or butter as desired.
- When the oil is heated, add about 2-3 spoons of the mixture and flatten the surface to get the shape of a pancake.
- Fry for about 1-2 minutes on one side, turn over and fry for another 1-2 minutes on the other side.
- Repeat with the procedure with the remaining mixture.
- Add toppings as desired and serve warm.
