Balanced Breakfast – Creamy Blueberry Banana Chia Pudding

Start your mornings healthy with this chia pudding with yogurt that contains an excellent balance of all macronutrients that are necessary for an energetic start to the day.

I was one of those people who used to eat lots of fruit for breakfast (because everyone said fruit for breakfast will make you lose weight and speed up metabolism) and this did not work at all for me.

While it may work for other people, for me it did the opposite – I ended up extremely hungry after one hour of eating fruits for breakfast.This resulted in me overeating with a heavier meal afterwards, and I gained weight, instead of losing it.

I knew it was time for a change, so I decided to balance my meals out and intake carbs, fat and protein in a balanced way. This was the moment I started creating my balanced recipes and only after a short time, my entire body, spirit, and mind changed.

I was and I still am full of energy, my body feels grateful and I have never been fuller in my life!

Today’s recipe is one of those breakfast I can’t get enough of! Super creamy, refreshing and nutritive. Give it a try, you won’t go wrong!

The pudding is prepared quickly and easily. You can even do it in a jar and take it with you to work.

Creamy Blueberry Banana Chia Pudding

Servings 1

Ingredients

  • 3-4 tbsp chia seeds
  • 1 cup Greek yogurt
  • 1/2 banana
  • a handful of fresh blueberries
  • 1 tbsp almond meal (or a handful of sliced almonds)

Instructions

  • Soak chia seeds in half the amount of yogurt or about 100 ml for at least 2-3 hours, it is best to leave them overnight.
  • The next morning in a blender put the other half of the yogurt, add the banana, blueberries and almonds and blend briefly. Pour the fruit part of the pudding to the bowl with the chia seeds and yogurt which have already gotten a nice pudding-like structure.
    Decorate as desired. I put fresh strawberries and some more sliced almonds.
