I really love mushrooms, plus they are a great source of protein, but somehow I always forget about them. The other day I saw them and thought, that’s it, today I’m preparing them for lunch!

I must also admit that I really like those stuffed versions of mushrooms, and this one with tomato and cheese, which is also the simplest, is my favorite. I like to call them pizza mushrooms, as the taste reminds of pizza topping so much!

Here’s how I prepare them. It is very tasty, quickly done and of course no matter how much I make them, there is never anything left for later.

And yes, I always prepare them for lunch because mushrooms are easier digested if eaten for lunch rather than dinner.

Best Pizza Stuffed Mushrooms

Ingredients:

  • 12 larger mushrooms
  • 3 tablespoons grated gouda or Mozzarella cheese
  • 6 cherry tomatoes
  • 1/2 teaspoon oregano
  • 2 tablespoons olive oil

Preparation:

Preheat the oven to 400 ° F. While he oven is warming up you throw yourself into washing the mushrooms.

Separate the stems from the caps, then finely chop the stems. Mix them with grated cheese and oregano.

Then halve the cherry tomatoes.

Coat the peeled hats with a little olive oil. Put half a tomato in each hat and then a mixture of cheese and oregano.

Place some parchment paper on a baking tray and place the stuffed mushrooms on it. Bake them for 20 minutes.

Serve them warm. They are a great appetizer, or perfect as a side dish with some salad!
