Creamy Vegetable and Amaranth Soup for Weight Loss

Vegetable cream soups are one of the healthiest and most nutritious. A full plate of vegetables and nutritious nutrients. A healthy lunch for the whole family in less than half an hour.

This is one of my favorite cleansing soups for speeding up weight loss.

Today I share with you an interesting and healthy recipe of this vegetable creamy soup with amaranth. Due to the richness of vegetables, this soup will fill you with many vitamins and minerals. The amaranth, on the other hand, provides it with extra nutrition

Creamy Vegetable and Amaranth Soup

Ingredients

  • 1 cup fresh broccoli
  • 1 cup fresh cauliflower
  • 1 zucchini
  • 1 medium potato
  • 2-3 carrots
  • 50 gr amaranth
  • 2 vegetable Bouillon cubes
  • 1/4 cup chopped parsley
  • 1 liter water
  • salt and pepper

Instructions

  • Cut all the vegetables into small cubes, pour water over them and add the two soup cubes.
  • Boil the vegetables for 10 minutes, or until they soften nicely. Then remove from the heat and blend with a hand blender for a few minutes until you get a creamy mixture.
  • Then return the pot to the heat and add the amaranth, cook for another 7-10 minutes. Finally add chopped parsley, pepper and salt if desired.
  • Serve this soup warm! Enjoy!
