Zucchini is one of the most versatile vegetables on the planet. It’s high in antioxidants and nutrients and aids to a better digestion. You can prepare it shredded, sliced, or whole. The choice is completely up to you. In this recipe, I will show you how to prepare it noodle-sized, almost like spaghetti looking.

You will need a spiralizer to create the noodles, and then cut them into smaller pieces. A medium sized grater will work just as well.

Easy BLT Zucchini Salad

Ingredients

  • 2 medium zucchinis (4 cups zoodles)
  • 2 tbsp olive oil
  • 1 tbsp red wine vinegar
  • 1 cup halved cherry tomatoes
  • 1 cup crumbled feta cheese
  • 1 cup crumbled crispy bacon
  • salt and pepper to taste

Instructions

  • With a spiralizer make the zoodles. Cut into smaller pieces.
  • Whisk together the oil and the vinegar and add them to the zucchini noodles.
  • Add tomatoes and cheese. Sprinkle salt and pepper to taste.
  • Refrigerate the salad for 1 hour before serving so that the flavors incorporate with the zucchini.
  • Before serving, add the bacon on top.
