Healthy Baked Oatmeal Cups With Coconut Cream Filling
This healthy, quick and easy dessert can be a great breakfast option.

It goes perfect with coffee in the morning, or with a cup of tea in the afternoon. Anyways, these oatmeal cups with coconut cream filling will for sure win your heart!
Healthy Baked Oatmeal Cups With Coconut Cream Filling
Ingredients
Oatmeal Cups:
- 3/4 cup oats
- 1 banana
- pinch of cinnamon
- a small handful of chopped walnuts (optional)
Coconut Cream Filling:
- 1/2 cup coconut flakes
- 1 tsp coconut oil
- 1/2 cup cottage cheese
- 2 tbsp coconut milk
- 1 tbsp honey (or maple syrup/stevia)
Instructions
- Mash the banana and add the remaining ingredients. Mix well, the mixture should be thick. Put the mixture in the cups of a muffin tray and with the help of a spoon or by hand make holes in the middle. Bake in a preheated oven at 350 degrees F for about 20-25 minutes until slightly browned.
- For the coconut cream filling, add all ingredients in a blender or food processor and mix well. If you use honey you will get a fairly thick mixture like for a cheesecake, and if you use a dry sweetener, add a little extra milk. It all depends on what density you would like to achieve. Fill the baked oatmeal cups with the coconut cream filling.
- You can also use this cream for a cake. Decorate them on top as desired, you can go with chocolate, fruit or butter.
