Mediterranean Cherry Tomato Tortellini
If someone asked you what’s the best summer lunch, you would answer: pasta with tomatoes? I know would!

This lunch is the first association with summer and a meal that we want to be light, refreshing and quick.
But when choosing pasta, you can always play around, so this time I reached for tortellini with meat.
Mediterranean Cherry Tomato Tortellini
Servings 1
Ingredients
- 100 gr tortellini (with meat filling)
- 200 gr cherry tomatoes chopped
- 2 garlic cloves finely chopped
- 1 tsp fresh parsley finely chopped
- 2 Tbsp olive oil
- grated Parmesan cheese (optional, for topping)
Instructions
- Cook the tortellini according to the instructions on the package.
- Then, heat the olive oil in a pan and add the finely chopped garlicFry the garlic for a couple of minutes and then add halves and quarters of the chopped cherry tomatoes and reduce the heat, then cover and let it simmer for 7-10 minutes.At the end, add the chopped parsley, and pour the sauce over the tortellini. Grate some Parmesan cheese on top, and enjoy!
