Paleo Coconut Flour Pancakes for Weight Loss
Lately, I’ve been experimenting with coconut flour and learned that I actually love it! All recipes I made turned out better than the original. That was the case with these coconut flour pancakes that are super easy to make, full of nutrients, and perfect for a low-fat diet!
I learned that coconut flour is a bit more specific and it takes some time to get used to cooking with it. However, once you get a hand on it, it will become your favorite flour to cook with!
Apart from giving a better flavor to the the recipes, coconut flour is a great alternative for people on a paleo or keto diet, or in general, people who would like to lose weight in a healthy manner.
When it comes to these pancakes, the only “flaw” I would comment about is that they take a bit longer to cook. Since coconut flour burns easily, you’ll have to cook them on medium-low heat in order to be completely cooked.
Otherwise, they are super moist and fluffy, and taste heavenly!
Paleo Coconut Flour Pancakes
Ingredients
- 1/4 cup coconut flour (or more, start with 1/4 cup and if needed add more gradually)
- 2 tbsp maple syrup (or agave, or honey)
- 2 tbsp melted coconut oil
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- pinch of salt
Instructions
- In a big bowl add the eggs, coconut oil, and maple syrup. Mix well until combined.
- Add the rest ingredients in the same bowl and stir nicely to combine. If too liquidy, add more coconut flour.
- Leave the mixture to set for about 7-10 minutes for the coconut flour to absorb all ingredients. The mixture should be thick but easily spreadable.
- Heat a non-stick pancake pan on medium-low and add 1 tsp of coconut oil.
- Add around 2 tablespoons of the mixture into the pancake pan and form a pancake-like circle with the tablespoon.
- Cook for 4-5 minutes, or until bubbles start showing up, then turn on the other side and cook for another 3 minutes.
- Serve pancakes with toppings of your choice. (You can add coconut cream, fresh fruits, nut butter, etc.)
