This recipe is a healthy chocolate cake with almonds and orange peel that will win you over on the first bite.

I needed a fast and easy dessert recipe over the weekend. My friends were coming over and I had to come up with something that is a classic, yet healthy and easy.

This chocolate quick and healthy chocolate cake turned out better than I thought! Amazing clean ingredients, strong chocolate flavor, creamy and decadent. You’ll love it!

My advice is to make sure you don’t bake it for too long to keep it creamy. Use quality dark chocolate so that the taste will be even better.

Quick and Healthy Chocolate Cake With Almonds and Orange Peel

Ingredients

  • 1 cup almonds
  • 3 tbsp wholemeal flour
  • 1 1/4 cup dark chocolate (at least 70% cocoa)
  • 3/4 cup olive oil
  • 1 orange
  • 2 tbsp honey
  • 3 eggs
  • 2 tsp baking powder

Instructions

  • Preheat oven to 350 degrees F. Line a round cake pan with parchment paper and set aside.
  • Put the almonds in a blender / food processor and grind well so that you get almond flour.
  • Mix almond flour with wholemeal flour.
  • Melt the chocolate with the olive oil in the microwave for 2 minutes, or by using a double-boiler.
  • Grate the orange peel in the chocolate and when it cools down a bit, add the egg yolks and honey into this mixture.
  • Mix the egg whites with a mixer until you get a foamy structure, then stir them with the chocolate part. Stir slowly with a spatula and make sure you don't over-mix it.
  • In the end, add the almonds and wholemeal flour to the prepared mixture. Stir well to combine and pour into your round cake pan.
  • Bake for 25-30 minutes.
  • If you enjoy decorations, pour a little melted chocolate on top and sprinkle with coconut flour.
