This salad is a great meal that can be both breakfast and dinner. You can make it yourself and take it with you to work.

Quick and Healthy Quinoa Tomato Salad

Ingredients

  • 3 tbsp boiled quinoa
  • 1 tomato
  • 4-5 black olives
  • 1/2 onion sliced
  • 1 tbsp olive oil
  • juice of half a lemon
  • 1/4 tsp sea salt
  • chopped parsley (optional)

Instructions

  • First, boil the quinoa in water, it is good to let it soak a little, at least 1-2 hours (or if you feel overnight).
    When the quinoa is cooked, chop the tomatoes, onions and olives. Season with olive oil, lemon juice, sea salt and a little parsley.
  • Enjoy!
