This avocado baked eggs recipe is everything you’ve ever wanted combined in a healthy, low-carb, high-protein breakfast! To me, this is the winning combo: healthy fats from avocados + proteins from the egg, a simple super delicious breakfast treat.

Ingredients

  • 3 large avocados
  • 6 eggs
  • salt and pepper

Instructions

  • Preheat oven to 425 and prepare a baking tray layered with parchment paper.
  • Remove the pit from the avocados and scoop out room for the eggs. (about a tablespoon)
  • Position the avocados close together so they don't tip, or simply use a muffin tin to position them nicely.
  • Crack the egg directly in the avocado half. Season with salt and pepper. Repeat with the rest avocados and eggs.
  • Bake for 12-20 minutes (depending on how you like your eggs).
  • Serve immediately and enjoy!
