The cauliflower as a base for this recipe will detoxify your organism, while the vanilla extract will give you that cookie dough kick. The nut butter is a great smoothie addition full of healthy fats that absorb the vitamins in this smoothie bowl.

Let me tell you, apart from being super healthy, this cookie dough smoothie bowl really tastes like the real deal, and my kids loved it! We became totally addicted to eating this breakfast almost every morning!

Cookie Dough Smoothie Bowl

Servings 1

Ingredients

  • 2 cups frozen cauliflower florets
  • 3 Medjool dates pitted
  • 2 tbsp creamy peanut butter (or cashew butter)
  • 1 tbsp vanilla extract
  • 1 banana
  • 2 tbsp chia seeds
  • 1/8 tsp sea salt
  • 1/2 cup non-dairy milk (of choice)
  • 2 tbsp toasted peanuts, plus more for topping
  • a small handful of dark chocolate chips (optional, for topping)

Instructions

  • In a blender add all ingredients (except for the peanuts) and blend until smooth and creamy.
  • Serve in a bowl topped with some dark chocolate chips, some peanuts and an extra drizzle of peanut or cashew butter.
