I know that for all the recipes I say this is one of the favorites, but this recipe for coconut almond bread is the real one of my favorites 🙂

And to convince you why, here are a few reasons:

  • Contains a small amount of sugar so it is ideal for a light and quick breakfast!
  • You can make a million variations. Add fresh berries or pieces of chocolate or chopped nuts or other similar toppings if desired for a more specific taste.
  • It has such a rich taste that even without any additives it is equally delicious!

Easy Almond Coconut Bread

Ingredients

  • 3/4 cup ground almonds
  • 1/2 cup dried coconut flakes
  • 2 tbsp coconut flour (or 4-5 tbsp oat flour)
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 cup almond milk
  • 1 tbsp melted coconut oil
  • 2 tbsp honey or maple syrup
  • 1 tbsp lemon juice
  • 2 eggs

Instructions

  • Preheat the oven to 180º C, or 350º F, and line some parchment paper on a baking tray.
  • In a deep bowl, add all the liquid ingredients (milk, coconut oil, honey, lemon juice and eggs) and mix well until the mixture is combined.
    Add all the other ingredients to this mixture and stir again.
  • The mixture should be thick, if not, then you can add a little more coconut flour or ground almonds.
    Add the mixture to the prepared baking tray and level it so that it is evenly distributed on all sides.
    If you use toppings, now is the time to add them.
    Bake for 35-40 minutes, or until it gets a golden crust.
