Slow Roasted Salmon Citrus Salad for Weight Loss

It’s great for people who are eating a well balanced diet, or those who want to start including some healthier habits and eat healthier dinners that don’t include heavy ingredients.

Not to mention, this slow roasted salmon salad is super easy to prepare, but trust me, the taste will amaze you!
The first time I made this one, my whole family was stunned by the mix of flavors and the juiciness of the salmon. Eating healthy after 5 p.m just got easier, so without any worries, go ahead and give it a try!
Slow Roasted Salmon Citrus Salad for Weight Loss
Ingredients
- 1/2 red onion
- 2 tbsp red wine vinegar
- Boston lettuce leaves
- 1 avocado
- Pepper flakes
- 3 roasted beets, quartered
- 2 oranges, peeled and cut into segments
- 1 grapefruit, peeled, cut into segments
- 1 large tomato, cut into 1/4 inch thin slices
- 1/2 English cucumber, sliced
- 1 lb slow roasted salmon
- pinch of Himalayan salt
Citrus Shallot Vinaigrette
- 1 tbsp shallot, minced
- 2 tbsp fresh lemon juice, or orange juice
- 1 1/2 tsp rice wine vinegar
- 1 garlic clove, smashed
- 5 tbsp. extra virgin oil
- salt and pepper to taste
Instructions
- In a small bowl put vinegar and add onions to pickle them. Let it sit for 15 minutes.
- Line a plate with lettuce leaves.
- Cut the avocado, and scoop spoonfuls into the plate. Season with salt and pepper.
- Add the beets, orange, and grapefruit segments on the plate.
- Then, add the tomato slices., and cucumbers.
- Add the pickled onions on top.
- Break the salmon into small pieces and add it to the plate.
- Add the citrus shallot vinaigrette on top and serve.
