The Best Healthy Salted Caramel Bars

If you follow me for a while now, you know I am a big fan of desserts.

So, finding a perfect dessert for me is kinda difficult. Let me tell you, after trying these salted caramel bars, I think I found a perfect one! I kid you not, these healthy salted caramel bars are so delicious I crave them every day.

Ever since I made the recipe, I cannot stop eating them, they literally became a staple in my house. Everyone who tried this dessert was stunned from the flavors and immediately asked  for the recipe.

These salted caramel bars are vegan, egg-free, without any refined sugars, and super easy to make!

How to make these healthy salted caramel bars?

These salted caramel bars have three layers. A crust layer, caramel layer, and chocolate layer.

For the crust layer you will need to combine all ingredients, transfer it to a 8×8 inch pan tap it with your hands to combine nicely,  and bake on 375 F for about 8 minutes, or until golden brown. Leave it to cool.

While the crust is cooling, prepare your caramel by heating your tahini mixture on medium heat, for about 2 minutes stirring constantly. Once done, pour over your lightly cooled crust. Transfer it to your fridge for at least an hour, or freeze it for 15 minutes (if you are in a rush).

While this is cooling, go ahead and prepare your chocolate layer. Microwave the chocolate and coconut oil for 2 minutes until completely melted and pour over the cold caramel bars.

Leave it in the freezer for another half an hour before serving, or in the fridge for at least 2 hours.

Cut it in bars and enjoy!

They can last in the fridge for a week, or in the freezer for up to a month.

Ingredients

Crust layer:

  • 1 1/2 cup oat flour (or almond flour)
  • 3 tbsp melted coconut oil
  • 2 tbsp maple syrup or honey
  • 1/2 tsp vanilla extract
  • 1/4 tsp sea salt

Salted Caramel Layer:

  • 1/2 cup tahini
  • 1/3 cup maple syrup or honey
  • 1/3 cup coconut oil
  • 1 tsp vanilla extract
  • 1/2 tsp sea salt

Chocolate layer:

  • 3/4 cup dark chocolate chips
  • 1 tbsp coconut oil

Instructions

CRUST

  • Preheat your oven to 350 F. Line an 8x8 inch square pan with parchment paper.
  • In a bowl add your oat flour, coconut oil, maple syrup, vanilla and salt. Mix well and transfer to the pan. Using your fingers evenly press down into the pan.
  • Bake for 8-10 minutes, or until golden brown. Leave it to cool.

SALTED CARAMEL

  • To make the salted caramel layer, in a small pot combine the tahini, maple syrup, coconut oil, vanilla and sea salt and place on medium heat for 2 minutes, stirring constantly.
  • Pour over the slightly cooled crust. Leave it in the fridge for an hour, or freeze it for 15 minutes before adding the chocolate layer.

CHOCOLATE

  • Combine your chocolate chips and coconut oil and microwave for 2 minutes to completely melt them.
  • Pour over the cooled caramel.
  • Add in the fridge or freezer for additional hour before cutting into bars.
