There is nothing better in a hot summer day than a refreshing avocado salad! This super-tasty and crunchy salad will energize your body and help you with detoxing and losing weight!

All ingredients are clean and organic, it’s super easy to make, and it tastes delicious. Get that rainbow of colors on your plate and jump-start your weight-loss journey!

I promise you, once you taste this vibrant salad, you’ll want to have it every day on your lunch/dinner table.

NOTE: You can use either fresh, frozen or canned corn for this recipe, either way it will taste the same!

Avocado Corn Salad for Weight Loss

Prep Time 15 minutes
Cook Time 5 minutes
Total Time 20 minutes

Ingredients

SALAD:

  • 1 lb cherry tomatoes, cut in halves
  • 14 ounce can corn kernels (or 2 ears of cooked corn)
  • 2 avocados (peeled, cut into chunks)
  • 1/2 red onion, thinly sliced
  • 1/2 cup cilantro (chopped) (or sub: parsley, chopped)

DRESSING:

  • 2 tbsp extra virgin olive oil
  • 2-3 tbsp lime juice
  • 1 tsp sea salt
  • 1/8 tsp black pepper

Instructions

  • In a large bowl, combine all salad ingredients and stir to combine.
  • Drizzle olive oil, lime juice, salt and pepper and stir again to combine. Enjoy!
