Delicious Cashew Chicken that is Better than Takeout

Juicy chicken, crisp-tender vegetables, and crunchy cashews coated with some delicious soy sauce! What do you say for skipping takeout and preparing your own restaurant-quality meal that’s easy, ready in 20 minutes, and much healthier? I say YES!

* This recipe is for 2-3 servings. If you want to prepare it as part of a meal prep, duplicate all the ingredients.

Delicious Cashew Chicken

Ingredients:

For chicken:

  • 2 pieces of chicken breasts
  • ½ head red onion, chopped into small cubes
  • 1 clove garlic, mashed or finely chopped
  • salt and pepper, to taste
  • full handful (about 1/3 cup) cashew nuts, chopped into small pieces
  • 4 tablespoons soy sauce
  • 1 tablespoon flour per wish (I used chickpea flour)
  • 3 teaspoons water
  • cooking oil (I use grape oil)

For vegetables (optional):

  • ½ of red cabbage
  • 1 red pepper

Method of preparation:

  1. Prepare the chicken. I want to wash it first and then cut into cubes and add to a small bowl. It is set aside.
  2. Add a little frying oil to the grill pan or your favorite cooking pan, enough to prevent the ingredients from sticking together. Allow it to warm up a little (not to burn) and add the chopped diced onions and garlic.  Leave to simmer for a few minutes. When the onion gets a transparent color and caramelizes remove from heat. (about 2-3 minutes).
  3. Add the pieces of chicken to the pan with the onion and garlic. Fry for about 4-5 minutes on one side or until it gets a crispy crust.
  4. Meanwhile, while the chicken is frying, add the soy sauce , flour and water to a small bowl. Mix well to obtain a thick mixture. This will be the sauce that will be added to the chicken. Depending on the flour you use, more may be needed.
  5. Add to the chicken and stir to combine and pour over each piece of meat.
  6. Add salt and pepper if desired and stir again. Finally, add the chopped cashew nuts, stir again and cover the pan with a lid. Allow to sit for another 5 minutes at a very low temperature.
    It is served immediately.
  7. For the vegetables. Cut the cabbage and red pepper into thin slices and add them to the same pan in which the chicken was fried and fry for a few minutes, or to caramelize and soak from the sauce in which the chicken was previously fried. Serve together or separately from the chicken. Additionally, you can add fresh scallions, because it is super delicious in this combination.
    The chicken and vegetables can be refrigerated for up to 4 days, just wait for it to cool completely before storing it in a glass, closed container. Before eating, just heat it for 5-6 minutes on a heated pan or in a micro.
