Fitness Oreo Cookies

Ingredients (for about 15 oreo cookies):

Dough:

  • 40 g coconut flour (order here)
  • 40 g oat flour
  • 2 tablespoon baking powder
  • 40 g cocoa powder
  • 1/2 teaspoon stevia powder
  • 40 g vanilla flavor protein casein
  • 250 g (6-7) egg whites
  • 40 g melted dark chocolate (80% cocoa)

Cream:

  • 10 g coconut flour
  • 40 g vanilla flavor protein casein
  • About 150 ml of lukewarm water

Preparation:

  1. Mix all the dry dough ingredients well. Add the egg whites and melted but slightly cooled dark chocolate, and stir briefly with a fork, then knead a compact dough with your hands.
  2. Roll out the dough thinly on a work surface lightly sprinkled with oat flour, to a thickness of about 3-5 mm. Make sure that the dough does not stick to your work surface. Cut about 30 circles from the dough with a mold about 5-6 cm in diameter or a glass with a sharp edge of a suitable size.
  3. Transfer the dough circles to a baking sheet lined with parchment paper and bake in a preheated oven at 350 Β° F for about 15 minutes (depending on the thickness of the dough and the strength of your oven). Leave the baked biscuits to cool a bit.
  4. While the biscuits are baking and then cooling, mix in the cream ingredients. In a bowl, mix the coconut flour, casein protein and lukewarm water. You need to get a very thick mixture.
  5. Coat the baked biscuit with about a teaspoon of cream, then press on the cream and combine another biscuit. Your cookies are ready to serve.
  6. Store the biscuits in a tin box that will preserve their freshness for up to a week.
