Healthy Homemade Twix Bars

This healthier variant of the popular Twix chocolates consists of gluten-free biscuits, coconut sugar caramel and homemade chocolate. It is a real pleasure when all the flavors and textures come together.

But I have to mention that making these chocolates is a bit messy, which means you’ll need a little more patience and a calmer hand. But in the end, all the effort will really be worth it when you taste this pleasure. I promise you, these twix bars taste even better than the originals!

Healthy Homemade Twix Bars

Ingredients for biscuits:

  • 1/2 cup extra virgin coconut oil (solid)
  • 1/3 cup maple syrup
  • 1 cup brown rice flour
  • 3/4 cup tapioca starch
  • 1/2 cup sweet rice flour
  • 1/2 teaspoon xanthan gum (or agar agar)
  • a pinch of salt

Preparation:

Put oil and maple syrup in a mixing bowl and mix briefly with a hand mixer until they combine into a creamy mixture.

Add the dry ingredients and mix with a food processor. Then knead with your hands into a dough that should be neither too sticky nor dry, it must be able to form into a ball. Add more flour if it is too sticky or syrup if it is too dry.

Place the dough on the baking paper, cover with another baking paper and roll out about half an inch thick over it. Use a sharp knife to cut the narrow and long rods and carefully transfer each to a prepared sheet (lined with baking paper).

Place it in a preheated oven at 350 degrees F for about 12-14 minutes (depending on the thickness of the biscuits), they are done when they are lightly browned. Do not bake them for too long as they will harden when cooled. Remove and allow to cool before further use.

Ingredients for caramel:

  • 1 cup coconut cream (thick part from a can of coconut milk)
  • 3/4 cup coconut sugar
  • 1 tablespoon cornstarch

Preparation:

In a saucepan, add all the ingredients and mix over medium heat. When the mixture starts to cook, reduce the heat and stir constantly for the next 3-4 minutes.

Remove from heat and allow to cool.

Arrange the cooled biscuits on a baking sheet and carefully “pour” the caramel, which has also cooled . You can do this with the help of a spoon or a decorating bag. Place them  in the fridge so that the caramel hardens while you prepare the chocolate.

For the chocolate layer:

  • 3 tablespoons  coconut oil
  • 2 teaspoons cocoa powder
  • 1 cup dark chocolate chips
  • a pinch of salt

In a bowl combine all ingredients and add it in the microwave for about 2 minutes with occasional stirring. If you don’t use a microwave, melt the chocolate in a double boiler.

Remove the bars from the refrigerator and carefully dip them into the prepared chocolate. Return to the tin and refrigerate to harden. Repeat if necessary.
