Delicious Crunchy Carrot Salad for Weight Loss
Looking for a sweet and crunchy carrot salad that is super creative and flavorful? Try this salad and you’ll never go back to a regular carrot salad!

This salad is easy to make, won’t take much of your time and your whole family will love it!
Once, I served it for guests and everyone was asking for the recipe. The best part is you can experiment and add any toppings you like. My ultimate favorite are cranberries and walnuts!
Crunchy Carrot Salad
Servings 6
Ingredients
- 2 tbsp olive oil
- 2 tbsp lemon juice
- 1 tsp Dijon mustard
- 2 tsp maple syrup
- 1/4 tsp sea salt
- ground pepper
- 4 cups carrots (shredded)
- 2 green onions (chopped)
- handful of fresh parsley
- 1/2 cup raisins (optional)
- 1/2 cup pecans (optional)
Instructions
- In a big bowl add the olive oil, lemon juice, maple syrup, mustard, salt and pepper and mix well.
- Add the carrots, green onions, and parsley and stir well.
- Taste and adjust if more seasoning is needed.
- Add the toppings of choice and serve. Enjoy!
