Delicious High-Protein Vanilla Coconut Balls

Vanilla and coconut is a flavor combination I doubt someone can resist! At least speaking for myself, I cannot imagine my day without at least one of these vanilla coconut balls!

If you haven’t tried making balls yet, you are really missing out.

They are so quick and easy to make and the perfect grab and go snack that satisfies.

Just a couple of these will fill you up and the kids will think they are candy. Coconut is the ideal way to get healthy fats and some good filling fiber to boost energy.

If you are not a fan of coconut, try these high protein snickers balls recipe.

High-Protein Vanilla Coconut Balls

Ingredients (for about 50 balls):

  • 200 ml coconut milk
  • 100 g coconut sugar
  • 130 g coconut oil
  • 200 g desiccated coconut (plus extra for rolling the balls)
  • 1 scoop (30g) whey protein from vanilla

Preparation:

Heat the coconut milk almost to boiling and then dissolve the coconut sugar in it. Remove from heat, then immediately add coconut oil and stir until dissolved. Then add the coconut and whey and stir everything to combine. If the mixture is runny, add more coconut. Put everything in the fridge for a couple of hours.

Form the cooled mixture into small balls with your palms and roll in coconut flakes. Cool for another hour and enjoy!
