Healthy Homemade Belgian Banana Waffles

If you have a waffle maker and you are also a fan of banana / oat pancakes – then these WAFFLES are just for you.

I often prepare them, especially for meal prep, because they come out in quantities around 5-6 (depending on the waffle maker), they stay in the fridge for 3-4 days, and you can freeze them too. They are delicious both cold and hot, perfectly mild even for breakfast and what else can I tell you except that they are ideal for everyone.

And if you are not a fan of meal prep, then be sure to prepare these delicious Belgian banana waffles when you have guests. I’m sure everyone will like them, you do not need a lot of fancy ingredients, and yet they give the impression that you really did your best.

Healthy Homemade Belgian Banana Waffles

Ingredients

  • 2 cups oat flour
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • pinch of salt
  • 3 medium bananas (ripe)
  • 2 eggs
  • 1 cup milk (any plant-based milk)
  • 2 tbsp coconut oil (or olive oil)
  • 3 tbsp maple syrup or any liquid sweetener
  • 1 tsp vanilla extract

Instructions

  • In a large, deep bowl, add all the dry ingredients (top 4 ingredients in the list above) and mix.
  • In a separate bowl, add all the liquid ingredients (the rest of the ingredients listed above) and stir again until combined.
  • Add the liquid mixture from the bowl to the dry mixture and stir it well until all the lumps that appear will be combined and evened out. Leave the mixture to set for 10-15 minutes until it thickens. Meanwhile, heat the waffle maker and spread it nicely with oil.
  • Add a few tablespoons of the mixture to the waffle maker (enough for one waffle) and cover. Fry for about 8-10 minutes (depending on the strength of the appliance)
  • When the waffle is ready, take it out and leave it on a plate to cool a bit. Repeat the procedure with the remaining mixture. Do not fold the hot waffles on top of each other so that they do not soften.
    They are served hot with additional toppings if desired or kept in a closed container, in the refrigerator.
