Leek and Potato Fritters for Your Next Patio Gathering

Leek and Potato Fritters

Ingredients:

  • 500 g of potatoes (about 2 large potatoes)
  • 1 larger leek
  • 1 clove of garlic
  • 40 g butter
  • 1 egg
  • 100 g bread crumbs
  • 2 tablespoons finely chopped parsley
  • Himalayan salt (order here)
  • pepper
  • coconut oil

Preparation:

  1. Boil the potatoes until halfway cooked, and grate them.
  2. Mix it with the garlic and sliced leeks that you previously sautéed a little in the butter.
  3. Season everything together, add egg, bread crumbs and parsley and stir.
  4. Gently shape the fritters with your hands and fry in coconut oil until golden.
  5. You can also bake them in the oven at 350 degrees F for about 20 minutes.
  6. Serve them with a dressing based on Greek yogurt with a little chives (optional), or as desired.
