Simple and Delicious: Baked Turkey Stuffed Zucchini

These baked turkey stuffed zucchini are made from healthy ingredients, rich in proteins, vitamins and minerals and easy to prepare, which is the perfect combination!

Baked Turkey Stuffed Zucchini

Ingredients:

  • 2 medium zucchini
  • Lemon juice
  • 1 tablespoon olive oil
  • 1 onion
  • 200 g minced turkey
  • 80 g mushrooms
  • 100 g tomatoes
  • 100 ml of canned mashed tomatoes
  • 100 ml of vegetable stock
  • Salt, pepper, dried basil
  • 100 g light Mozzarella cheese (grated)
  • Chopped fresh chives, for serving

Preparation:

1. Wash the zucchini, remove the upper stalk and cut lengthwise into two parts. Using a small spoon, scoop out the flesh of the zucchini (and save it for later), and place the halves of the zucchini in a baking sheet lined with baking paper and drizzle with lemon juice so that they don’t turn black.

2. Chop the onion into cubes, cut the mushrooms into slices, as well as the meat and tomatoes into very small cubes.

3. In a deep frying pan, heat the olive oil, then sauté the onion until it becomes brownish and begins to caramelize. Add the minced turkey pieces. Saute for about 5 minutes until brown.

4. Add the saved flesh of the zucchini, mushrooms and chopped tomatoes and simmer for a minute. Then add the mashed tomatoes, vegetable stock, salt, pepper and basil and mix everything. Cover the pan and cook everything for about 8 minutes, until the vegetables are slightly softened. Stir uncovered for a few more minutes, so that the excess liquid evaporates if necessary.

5. Fill the halves of the zucchini with the prepared stuffing, and sprinkle with grated mozzarella. Bake in an oven preheated to 400 ° F for about 15 minutes. Sprinkle with chopped chives (or other herbs if desired) and serve. Bon Appetite!
