I chose cauliflower because it is very tasty, it has very few calories (about 25 calories per 100 g), but on the other hand it has a great nutritional value. It is a great source of vitamin C, B vitamins, especially folic acid.

Cauliflower is rich in many minerals that protect and preserve our health. These cauliflower patties are a great alternative for making vegan burgers, or simply add them on your lunch/dinner table.

Low-Calorie Healthy Cauliflower Patties

Servings 12 patties

Ingredients

  • 1 1/2 cup boiled cauliflower
  • 2 eggs
  • 1 medium onion
  • 2 garlic cloves
  • 2-3 tbsp bread crumbs (or quick oats for a healthier version)
  • 1 tbsp olive oil
  • salt and pepper to taste

Instructions

  • Preheat oven to 400 degrees F and line a baking pan with parchment paper.
  • Puree the boiled cauliflower with a puree tool, add the eggs, grate the onion, finely chop the garlic, add the olive oil and season as desired. Finally slowly add 1 tablespoon of bread crumbs or oats and stir, if necessary add another 1-2 tablespoons. The mixture should be of a density that allows the formation of patties/burgers.
  • Form around 12 patties and arrange them on the baking pan. Bake for 15-20 minutes or until the patties are golden brown.

You can combine these cauliflower patties with burgers or salads. Simply, be creative and enjoy in their pleasant flavors!
