The Ultimate Healthy Peach Oatmeal Muffins

If you are a peach lover or you have some leftover peaches that are laying in your fridge, get to work and make these AMAZING healthy peach oatmeal muffins!

The recipe is so easy to make, it is not time-consuming at all, and includes ingredients you probably already have in your kitchen. These cinnamon sugar crusted muffins are the perfect breakfast on the go!

The process is very simple, just toss everything in a bowl, give it a nice stir and fill your muffin cups!

The Ultimate Healthy Peach Oatmeal Muffins

Ingredients

  • 1 cup all-purpose flour
  • 1 cup rolled oats
  • 1/2 cup brown sugar packed
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup unsalted butter melted
  • 1 cup sour cream
  • 1 egg
  • 1 cup chopped peaches

Cinnamon Sugar (optional)

  • 1/4 cup sugar
  • 1 tbsp cinnamon

Instructions

  • Preheat oven to 400 degrees F, and line a muffin tin with paper liners.
  • In a bowl combine flour, oats, brown sugar, baking powder and salt.
  • In another bowl, whisk together butter, sour cream and egg. Pour this mixture over the dry ingredients mixture and stir well to combine. Add peaches and stir to combine.
  • If you are making the cinnamon sugar, combine sugar and cinnamon in a small bowl and stir nicely.
  • Pour the batter evenly into your muffin cups and sprinkle cinnamon sugar on top (optional).
  • Bake for 16-18 minutes or until a tester inserted in the middle comes out clean.
  • Remove from oven, let it cool and the muffins are ready to serve!
